The Kale Project
Dear Friends of Watumull Children’s Education,
Everyday on our lunch menu we serve cabbage to our (almost 2000!) students. But last month, we decided to boost nutritional content by adding skumawiki once a week for lunch at Bethany Joy School.
Skumawiki is a traditional Kenyan vegetable dish made of onions, tomatoes, and skuma. Skuma is a leafy green similar to kale.
We found a wonderful wholesaler to deliver to the school on Wednesday mornings. As you can see, it is a very large amount needed for Bethany’s population of nearly 1000.
The kale is finely shredded, which is an all morning task for our kitchen team. Then it is sautéed with tomatoes, onions, cilantro, and oil.
It is a treat for everyone! The Kenyan children are very happy with this healthy addition! The teachers laugh when I tell them that the American children wouldn’t be so pleased with kale on their plates at school!! 😀
